  • It’s All About the Wood! The brewery uses natural wood from a local purveyor of carefully selected wood for 5 star, high quality restaurants. The wood bill is a line item on the brewery’s budget. It’s that important. The right wood imparts an ever-so-slight smoke expression that you will not find in conventional ovens or conveyor belt pizzerias. 
  • Wood Fire Oven: The brewery purchased, over a year ago, a made-to-specs, made by hand wood-fired oven which was constructed just for the restaurant in Sonoma, California, before being shipped over 3,000 miles to Evernia Street. The oven which is used in the brewery restaurant cost over $20,000. Yes, materials matter. 
  • Made to Order: Each pizza is made-2-order, right in front of you. Sit at the open kitchen bar and enjoy the show.
  • Best Ingredients: Our ingredients cost more! You get what you pay for! The Brewery uses the more expensive San Marzano tomatoes and the Double Zero (00) flour, rather than the less expensive, mass-farmed, field tomatoes and all purpose flour. We seek out local, artisan ingredients, including local farmed greens, top notch salami and pepperoni and gourmet mushrooms and veggies.
  • Home Made Dough: The dough is hand made and made right on the premises at the brewery, rather than using machine-made, mass-produced dough from some distributor.
  • Thinner Crust + Char: Our patrons tell us that they love the dough and the crust. The crust on this upscale pizza is not super thin, but thinner. With the right handling of the pizza in the oven (a good pizza maker or pizza chef will rotate the pizza and move it about for an even cooking). Check out the bottom of each pizza to see the little black or brown marks, circles or bubbles which denotes a high heat and even cooking. 
  • Florence Inspired Pizza: It is not deep dish Chicago pizza nor Brooklyn style. The pizza at the brewery is inspired by Italy and the years’-old wood ovens we saw in Florence and Venice.
  • Pizza Menu: We offer so called “traditional” simple pizzas, many of which you would find in Roma, Venezia or Firenze, or this summer on the Amalfi Coast. However, from time to time, our kitchen does get creative. So, please check what the daily specials are on the paper scroll on the wall to the right of  the oven. We will challenge your palate without changing the dignity and integrity of a great wood fire pizza.

  • Management and ownership made a decision over a year ago, during the final construction phase, to put in a restaurant and open kitchen at the brewery. As such, there are no food trucks.
  • Each pizza is hand made and prepared right in front of you at the open kitchen.
  • You can sit at the kitchen bar, take a seat, and enjoy dinner and great craft beer made right on the premises.
  • Great Wine! Or, pair that pizza with a glass of over 20 wines available at the brewery’s Napa Valley-like tasting room, called The Vault. 
  • Do you enjoy Zinfandel with your pizza or a big red Grenache or Syrah? We have you covered. The wine list at the Brewery also has medium body wines from Napa and the Sta Rita Hills as well as big Napa Cabernet Sauvignons and Reds from Oakville, Howell Mountain, Spring Mountain, Stags Leap District, Rutherford and Coombsville. The wine prices for our vineyard direct wines are 20-50% less than what you would pay in Napa or Sonoma or Santa Barbara. Bottles of these premium and ultra premium wines start at $19.
